Crunchy, cheesy and loaded with delicious ingredients, those Mexican pizzas are a brief and clean dinner concept!

- 8 soft taco flour tortillas
- 1 (15 oz.) can refried beans
- ⅔ c. red enchilada sauce
- 2 small tomatoes, diced,
- 1 small block (8 oz.) colby jack cheese
- 3 green onions, sliced
Optional Toppings:
- Sliced olives
- Green chilies
- Minced cilantro
INSTRUCTIONS:
- In a huge skillet set over medium heat, brown beef and season.
- Meanwhile in a small skillet set over medium-excessive warmth, add the oil. Fry the flour tortillas just until golden brown, switch to a paper towel covered plate.
